Beat the Heat With Bread Lab's Fruity Cooler

Summer drinks are a hard category for innovation. They’re the karaoke song of the cocktail kingdom, really: people like the classics and clichés, and most especially the big, tacky numbers that leave a shame hangover for days. Subtlety and integrity are for squares between May and September, or so the general thinking goes.

At Pawtucket’s Bread Lab, however, bar manager Mindi Bennivedse developed a seasonal, produce-driven cocktail that manages to be both fun and tasteful. And, oh, also irresistibly slurp-able. “It’s a salad in a glass,” Mindi jokes, which would make it the most merry (and devilish) salad ever devised. In it, fresh watermelon and cucumber, a classic summertime pairing, get a kick in the pants from organic vodka. And the surprising element that puts it over the top? Honey, just a touch, which marries the drink’s parts and makes the whole mysteriously addictive. Not unlike a perfect pop hook.
